Casa Brera, a Luxury Collection Hotel, Milan belonging to Marriott International, is currently recruiting a Head Chef.

Reporting to the F&B Manager, the role oversees all kitchen operations, ensuring consistency, quality, and efficiency.

This is full-time position, 5 days a week with 2 days off. 

 

JOB SUMMARY

Accountable for overall success of the daily kitchen operations.  Exhibits culinary talents by personally performing tasks while leading the staff and managing all food related functions.  Works to continually improve guest and employee satisfaction while maintaining the operating budget. Supervises all kitchen areas to ensure a consistent, high quality product is produced.  Responsible for guiding and developing staff including direct reports. Must ensure sanitation and food standards are achieved.

CORE WORK ACTIVITIES

 

Ensuring Culinary Standards and Responsibilities are Met

  • Prepares and cooks foods of all types, either on a regular basis or for special guests or functions.
  • Reviews and adjust systems and procedures in the kitchen to ensure their effectiveness. 
  • Develops, designs, or creates new menus and recipes based on standards or artistic contributions.
  • Demonstrates knowledge of high quality food products, presentations and flavor.
  • Ensures compliance with food handling and sanitation standards.
  • Ensures compliance with all applicable laws and regulations.
  • Follows proper handling and right temperature of all food products.
  • Knows and implements brand's Safety Standards.
  • Supervises kitchen shift operations and ensures compliance with all Food & Beverage policies, standards and procedures.
  • Maintains purchasing, receiving and food storage standards.
  • Operates and maintains all department equipment and reports malfunctions.
  • Supports procedures for food & beverage portion and waste controls.
  • Develop and implement environmentally friendly processes and procedures for food preparation, energy use and waste management in the restaurant.
  • Checks the quality of raw and cooked food products to ensure that standards are met.
  • Assists in determining how food should be presented and creates decorative food displays.

  • Supervises and coordinates activities of cooks and workers engaged in food preparation.
  • Utilizes interpersonal and communication skills to lead, influence, and encourage others; advocates sound financial/business decision making; demonstrates honesty/integrity; leads by example.
  • Supervises and manages employees. Manages all day-to-day operations. Understands employee positions well enough to perform duties in employees' absence.

  • Ensures that menu items are prepared and presented according to use record standards.

What you'll do Front Desk: - Acting as Duty Manager whenever department manager is not on shift and be responsible of the desk whenever you are on duty. - Process guest check-ins/check-outs according to LQA and Marriott International standards, process all payment types and count bank at the beginning and end of shift. Guest Experience - Responsible for ensuring authentic recognition of all guests, informing all departments of the guests' arrivals, special needs, requests, and personal preferences. - Collaborate with management to develop and carry-out ideas and procedures and set goals to continuously improve the guest satisfaction performance. - Assign and ensure work tasks of the department are completed on time and that they meet appropriate quality standards. - Handle all internal and external phone calls answering within the third ring, guest and talent calls alike, log all calls in the internal CRM, and act as a dispatch to facilitate guest requests, including wake up calls, housekeeping and maintenance. - Manage and coordinate guest chats, create, monitor and close cases using the appropriate Marriott tool. - Contact guests prior to arrival to assist with booking itineraries, restaurants, promotions and room packages, special requests and to prepare for effective recognition. - Coordinate and handle room service request, take food and beverage orders for guests who would like to dine and drink in their room. - Assign appropriate amenities to guests prior to arrival and deliver such amenities on arrival day. - Respond to and handles guest problems and complaints to the guest's satisfaction. First person, problem resolution. Keep track of negative cases and communicate guest issues with the team. - Act as a liaison to coordinate the efforts of Housekeeping, Engineering, Front Office, and Laundry. General Tasks - Follow Standard Operating Procedures and brand identity guidelines at all times. - Follow all company safety and security policies and procedures, report accidents, injuries, and unsafe work conditions to manager. - Ensure team compliance with quality assurance expectations and standards. - Be the point of conduct for the Guest Experience experts during the shift and support the management in any request. RESPONSABILITÀ PRINCIPALI: ? Lavorare al massimo delle prorpie potenziailtà affinchè sia sempre garantito un elevato standard di qualità, creatività, freschezza e preparazione. ? Assistere gli Ambassadors nelle operazioni quotidiane svolte nelle aree della cucina. ? Seguire gli standard di servizio e impiattamento al fine di mantenere alto il livello qualitativo di produzione e presentazione. ? Assicurarsi che l'area della cucina sia sempre pulita ed in ordine, il linea con gli standard aziendali. ? Familiarizzare con le procedure di emergenza ed essere pronti per qualsiasi emergenza che possa verificarsi. ? Partecipare a meeting e corsi di formazione quando richiesto. ? Mantenere un grooming ed un'igiene personale conformi alle policies dell'hotel.
